Formaggio di latte vaccino erborinato a forma cilindrica. Crosta naturale di colore grigio-bruno, ruvida e spessa. Pasta compatta e contemporaneamente friabile e cremosa, di colore bianco-giallastro screziata di muffe bluastre. Stagionatura di almeno 6 mesi.
